Peel and finely chop the ginger and garlic. Cut the chili into fine rings. Peel the carrots and cut them into fine strips or rings. Clean the mushrooms, remove the stems and quarter them. Clean the spring onions and cut them into rings.

Briefly fry ginger and garlic in a little oil, then deglaze with beef or vegetable stock, sake, soy sauce, and mirin. The quantities given for the liquids are only approximate values. The amount and composition can vary depending on the taste and sauce requirements, so maybe not at the beginning; do not pour the complete amount of liquid into the pot, but gradually do it if necessary.
